2017 Desert Ridge Cabernet Sauvignon Amphora Project
We hand-harvested sections of our best rows of Cabernet Sauvignon from our arid, stony Desert Ridge vineyard in Osoyoos on the 28th
of October. After destemming, we added the berries to the Amphora without any additions such as sulphur or yeast. We hand plunged it once per day and held it on skins for several months before pressing it off. It is naturally fermented, went through natural malolactic fermentation, and is bottled unfined and unfiltered without any additives. We yielded 24.5 twelve-bottle cases – or 320 individually hand-numbered bottles.
A wet spring led to a later start, however, the 2017 season was warmer and more compressed than normal. The season brought smaller berry size, clusters and yields. Fruit quality was excellent, characterized by high flavour concentration, moderate alcohol, balanced tannins,
complexity and natural acidity.
