2017 Block 7 Pinot Gris

The lower vigour in the stony sections of Block 7 compared to the loamy sections leads to far more concentration and a much riper profile. In 2017, we decided to push those intense ripe flavours, sugars, and phenolics into the ‘very ripe’ spectrum, understanding we were aiming to make a wine more alike to Alsace than to the Okanagan. At 2.4 ton/acre, the vines are very focused on building intense flavours and phenolics in that fruit. The grapes were gently whole bunch pressed, the juice briefly settled, and fermented using organic yeasts. The balance is unabashedly off-dry, with the sugar complementing the phenolic structure and lingering acidity which is still evident despite the ripeness attained.
